I tried a new recipe as a part of my holiday baking. It’s a winner, though I think it could be improved with sliced fresh strawberries on top–something that’s not so easy to come by here in December.
Cheesecake bar cookies
1 cup butter
2 cups flour
1/2 cup powdered sugar
Cream these three ingredients and press into a 9×13 pan. Bake at 350 degrees for 20 minutes.
While the crust is baking, beat together the following:
8 ounces cream cheese softened
2 eggs
1/2 cup sugar
1 teaspoon almond extract
Pour this mixture over the warm crust and return to the oven. Bake for 15 to 20 minutes, until set.
If that is the stuff you brought on Christmas, I never tasted it. Bet it was good.
