Last week a friend asked for a simple rhubarb recipe. She had never cooked with it before. I shared two recipes grandma used to make.

Rhubarb Crisp
6 cups chopped rhubarb
2 eggs
6 tablespoons flour
2 cups sugar (or a little more if you like)
Mix all these ingredients together and pour into a 9- x 13-inch pan.

Prepare a topping of
2/3 cup brown sugar
1½ cups flour
½ cup butter

Sprinkle this crumbly mixture over the rhubarb mixture in the pan. Bake at 350 degrees Fahrenheit for 45 minutes or until golden and starting to bubble.

Rhubarb Jam
5 cups chopped rhubarb
2 cups sugar
½ cup water
3-oz. package strawberry Jello (or any red flavor)

Heat the rhubarb, water and sugar until boiling. Reduce heat and simmer for about 10 to 15 minutes or until rhubarb is very soft and falling apart. Add the Jello and stir well. Pour into jars. This will keep in the refrigerator for months, even without sealing the jars.

  1. Those are both good ones. M, M, and L helped me make rhubarb jam last week when they were over. Nothing like extra hands to help cut up all the rhubarb. 🙂
