A baked sweet potato is the most nutritious vegetable, according to the Center for Science in the Public Interest, which ranked vegetables based on their dietary fiber, complex carbohydrates, natural sugars, protein, vitamins A and C, calcium and iron.

For 130 to 160 calories, a medium sweet potato provides 4 g of fiber, four times the recommended daily allowance (RDA) of beta carotene, almost twice the RDA of vitamin A and 42 percent of the RDA of vitamin C.
